These toxicological monographs summarize the safety data on a number of food additives, including alitame, cross-linked sodium carboxymethyl cellulose, mineral oils (medium- and low-viscosity) and paraffin waxes, nitrate and nitrite, and salatrim. Monographs on six groups of related flavouring agents evaluated by the Procedure for the Safety Evaluation of Flavouring Agents are also included.
